Pauletts Shiraz presents itself in a deep, dark ruby red with violet reflections. The dense color suggests concentration, while swirling the glass reveals slow, even legs – a sign of a full-bodied, structured wine.
The nose reveals an intense aromatic complexity: blackberries, blackcurrants, and plums dominate, while subtle notes of dark chocolate, vanilla, and oak resonate. Spice aromas such as black pepper and clove provide a distinctive depth.
On the palate, this Clare Valley Shiraz is powerful yet smooth. Ripe dark fruits merge with finely tuned spices and subtle roasted aromas. The tannins are present but velvety, and the acidity is well integrated, providing a pleasant freshness. The finish is long and elegant with hints of chocolate and tobacco.
The grapes for this Clare Valley Shiraz come from high-altitude vineyards with gravelly soils and cool nights, which allow for slow ripening. The wine matures in French and American oak, which harmoniously develops its silky texture and fine woody notes.
The Paulett family crossed half a continent after deciding to make wines big where they had previously been small. They now make the world's best Riesling and Shiraz.
In the 1980s, Neil and Alison Paulett decided to move to the Polish Hills in the Clare Valley. Australia was in recession and suffering from a severe drought. They chose the most beautiful place in the whole of the Clare Valley, a region that was only just making a name for itself as a wine region. Everything spoke against it, but the Paulett couple fought their dream through and are now the proud address for the best Riesling in the world (Best of 500 - International Riesling Challenge). The younger Paulett generation, Matt and Ali, now have the reins and are successfully driving the family business forward. They continue to produce Riesling, Shiraz and sparkling wines.
