Pinot Meunier (also known as Schwarzriesling) is considered an underdog among the three classic Champagne grape varieties (Chardonnay, Pinot Noir, and Pinot Meunier). The Champagne Salmon winery is fully committed to this one grape variety, the underdog Pinot Meunier, and is being rewarded for it. Today, the name Champagne Salmon is internationally synonymous with pure Champagne made from Pinot Meunier.
However, this fame doesn't go to the heads of this down-to-earth family. After all, the family's 85-year-old grandfather, Michel Salmon, still works here, riddling his Champagnes by hand. With horses and without hydraulics, the precious juice is extracted from hand-picked grapes in an old press. With meticulous obsession, father Olivier and son Alexandre Salmon rely on manual labor and regionality. How regional? The barrels are made from oak trees that grow right next to the vineyards.
