The David Ermel & Fils Pinot Blanc shimmers in a pale golden yellow with soft, greenish reflections. The clear, brilliant color and slight viscosity in the glass suggest a fresh, lively, and elegantly structured wine.
The bouquet is characterized by delicate aromas of green apple and ripe honeydew melon. Subtle floral notes of dandelion complement the fruit, while a hint of honey and a discreet creaminess add extra depth to the wine. A touch of vanilla completes the aromatic profile.

The grapes come from Alsatian vineyards around Wettolsheim and are selectively harvested. Fermentation and aging take place exclusively in stainless steel. No wood, no frills. The focus is on origin, clarity, and a consistently dry Pinot Blanc style with David Ermel's clear signature.
Tradition as quality assurance.
The Ermel family can look back on an impressive history of winemaking. The craft has been passed down from father to son since 1795. Each generation brings something new, but much remains the same. In the cellar, the beautiful, old built-in tanks are looked after and the shaking table, on which the senior regularly shakes the champagne bottles, has certainly been in use for several decades. Here, David Ermel Senior turns the vintage Crémants by hand every day and adds jokingly: "My sons want me to be busy enough too." Traditionally, mainly white grape varieties are bottled here, but a small area of Pinot Noir is also cultivated.
