Grilled peach with juicy flowers.

In the glass, it appears pale gold with a cool sheen, almost like dawn over wet limestone. The color remains clear and precise. No exaggeration, rather focused elegance. This Aligoté visually already shows what it promises in taste: tension under control.

Pear and green apple appear first on the nose. Lemon zest, grilled peach, and flint follow like two clear signals from the Burgundy limestone. A hint of vanilla and seashell minerality lie beneath, finely dosed. No broad fruit. Rather precise freshness with drive.

The opening is crisp. The acidity takes hold and provides razor-sharp focus. Stone fruit and quince flash through. Then the wine contracts again, leaving behind chalk, citrus veins, and a touch of wood. Taut, wiry, pointed. Not an ounce of fat, just tension.

A classic Aligoté, but treated like a lean Chardonnay. Up to 20% new oak. 10–12 months on the lees. The chalky soils provide the mineral edge, the cooler climate the acidity. Why is it special? Because Aligoté is taken uncompromisingly seriously here.

Domaine Taupenot - Merme

Virginie and Romain have revived a sleeping giant.

The siblings Virginie and Romain Taupenot cultivate over 13 hectares with 19 appellations from Auxey-Duressees in the south to Gevrey-Chambertin in the north of the Côte d'Or, producing a range that is as diverse as it is qualitatively homogeneous. Since the beginning of the millennium, organic farming without labels has revived a wine region that was born in 1974 from the union of the two owner families and that has since then awaited the passionate commitment of the current generation of owners to revive the full potential of the highly sought-after plots, in particular Mazoyères-Chambertin and Charmes Chambertin in the Grand Cru.
