We search specifically.
To begin our selection process, we have to define exactly what we are looking for. The search profile includes grape varieties, wine styles, regions and much more. Our restaurant customers can also define a search profile for us.
We know what we are looking for.
The world of wine is large and confusing. After we have created a search profile, detailed research follows. We read up on wine regions, research on the Internet, go to wine fairs, follow recommendations and insider tips.
We know the origin.
The list of potential wineries is determined through research. We travel to the region and visit the wineries. Personal contact and an on-site inspection give us the opportunity to go through our checklists (natural, honest, social). If we are convinced by the on-site tasting, we take sample bottles with us.
Only the taste counts.
After we have sifted out the wines based on our NES criteria (Natural, Honest, Social), there are usually only a few wineries left in the running per search profile. Their wines are tasted in sensory blind tastings by wine lovers, sommeliers and other wine experts. The opponents in the blind tasting are competing wines and control wines from our range. This way we can guarantee only the best wines.
