Lemon zest meets flinty minerality
In the glass, it presents itself in a cool, bright golden hue with silvery reflections – almost like morning dew on granite. The viscosity is clearly structured, viscous enough to hint at substance, but never heavy. Elegant, precise, and thoroughly mineral in character.
The nose is smoky-reductive with austere nobility – like wet flint after a summer thunderstorm. This is joined by yellow apple skin, green hazelnut, and a hint of toasted brioche. Delicate citrus zest and white flowers shimmer in the background – almost like the echo of a quiet Chablis call from Baden.
Powerful and cool on the palate, with an acidity so incisively sharp it almost has the contour of a crystal. Tonic-like bitterness provides grip, framed by saline minerality. Lemon peel, ripe pear, and a hint of nutty richness allow the finish to slowly glow like embers under stone.
Selective hand-picking, spontaneous fermentation, and long lees aging in large wooden barrels – Salwey's style remains Burgundian-inspired but Baden-rooted. The Steingrubenberg, with its orientation and geology, brings cool tension into play. Not a Chardonnay for the masses, but one that rewards a second glance – and a third sip.
