For generations, the Salwey family has tilled the black volcanic soil of the Kaiserstuhl. A mixed farm became a pure winery in the 1960s – today, Konrad Salwey manages its fortunes as the third generation. Approximately 40 hectares of vineyards, spread across the Kaiserstuhl and Glottertal, provide the stage. Here, the VDP winery's Burgundy varieties grow in all their facets – Weissburgunder, Grauburgunder, and Spätburgunder – along with some Riesling and old traditional vines. Salwey remains true to its clear philosophy: always dry, always Burgundy. The winemaking process follows a conviction, not a trend: spontaneous fermentation, plenty of patience in the barrel, little new oak, no frills. The result can be tasted from the clear, salty estate wine to the vibrant Spätburgunder from the Eichberg. Each wine bears the signature of the soil – loess provides juiciness, volcanic ash ensures grip and depth. This produces Burgundies that do not aim for pleasantness but for character. And that is precisely what makes Salwey one of the most exciting names in Southern Germany today.
Nature as a Silent Partner.
Sustainability is a lived reality here. Chemical sprays have no place in the vineyards. Instead, the focus is on cover crops, natural soils, and biodiversity. Many parcels are located directly adjacent to nature reserves – a daily reminder that every action considers the climate, flora, and fauna.
Unvarnished wines.
In the cellar, the rule is: no beautifying, no disguising. Fermentations occur spontaneously, wines ferment uncompromisingly to dryness. New barriques are only used where they serve the wine. Everything else remains pure. Thus, Salwey wines taste not of technique, but of origin – edgy, honest, and unadulterated.
Rooted in the region.
Salwey thinks beyond their own vineyards. The winery has been firmly rooted in VDP Baden for decades, training young winemakers and generously sharing its knowledge. Visitors experience wine not as a product, but as culture: whether on hikes through the vineyards or during sundowners at Kaiserstuhl. Community, openness, and regional responsibility are not just buzzwords here, but a lived ethos.
