The Pauletts Shiraz is an intense ruby red with deep violet reflections that impresses with its density and clarity. The bright color speaks of maturity and concentration, while the delicate streaks herald elegance and structure.
The aromas of dark fruits such as ripe plums and juicy cherries dominate. Tart blackberries and spices shine through the fruitiness. All of this is framed by chocolate notes.
On the palate, the wine is full-bodied and velvety, with a harmonious balance of ripe fruit, silky tannins and well-integrated acidity. Dark fruit notes blend with spicy and slightly smoky aromas, leading to a long, warm finish.
This Shiraz comes from the cool, elevated areas of the Clare Valley, which are known for their excellent fruit and acid balance. Aging in French oak barrels increases the complexity, while sustainable vineyard management preserves the character of the terroir.
The Paulett family crossed half a continent after deciding to make wines big where they had previously been small. They now make the world's best Riesling and Shiraz.
In the 1980s, Neil and Alison Paulett decided to move to the Polish Hills in the Clare Valley. Australia was in recession and suffering from a severe drought. They chose the most beautiful place in the whole of the Clare Valley, a region that was only just making a name for itself as a wine region. Everything spoke against it, but the Paulett couple fought their dream through and are now the proud address for the best Riesling in the world (Best of 500 - International Riesling Challenge). The younger Paulett generation, Matt and Ali, now have the reins and are successfully driving the family business forward. They continue to produce Riesling, Shiraz and sparkling wines.
