    Green apple with herb-citrus zest.

    In the glass, Verjus Sparkling presents a crystalline straw yellow with greenish reflections. The fine, lively perlage rises in even chains, reminiscent of freshly poured sparkling wine. Clear, brilliant, and with precisely the tension that makes freshness visually palpable.

    The nose is dominated by green apple, lime zest, and unripe pear, flanked by herbs and a hint of tonic bitterness. Behind this lies a cool grapiness – so characteristic of verjuice. Fresh, precise, with a salty, almost mineral nuance.

    The palate is taut and invigorating. The acidity cuts like a freshly sharpened knife, and the perlage carries and extends the wine. Green apple, citrus zest, and tart herbs run through the flavor, dry, clean, and with a long, mouth-watering finish.

    This sparkling drink is made from green-harvested grapes, long before they reach their full sugar ripeness. No fermentation, no alcohol, but verjus as the base. Carbonation replaces the secondary fermentation. This results in wine logic without alcohol, with natural acidity, structure, and serious gastronomic depth.
