Pinot Meunier? Champagne Salmon!
In the tranquil Champagne town of Chaumuzy, the Salmon family is now in its third generation of growing grapes. The family recognized the potential of hand-picked wines from Champagne early on and grew organically from a local vendor at the weekly market to an internationally known name.
In addition to the passion for the craft, the attention to detail and the aim of producing the perfect winemaker champagne (with an RM batch number on the bottle, i.e. everything produced from and on the farm without outside help and grapes), one fact in particular stands out: Pinot Meunier. The sole focus on Pinot Meunier.
Pinot Meunier (also called Pinot Noir) is considered the underdog among the three classic Champagne grape varieties (Chardonnay, Pinot Noir and Pinot Meunier). The Champagne Salmon winery is fully committed to this one grape variety alone, the underdog Pinot Meunier, and is being rewarded.
The name Champagne Salmon is now internationally synonymous with pure champagne made from Pinot Meunier.
But this fame has not gone to the down-to-earth family's head. The family's 85-year-old grandfather, Michel Salmon, still works here and shakes his champagne by hand. The valuable product is extracted from hand-picked grapes in an old press using horses and without hydraulics. With meticulous obsession, father Olivier and son Alexandre Salmon focus on manual work and regionality. How regional? The barrels are made from oak that grows right next to the vineyards.
In addition to their love of honest grapes, the Salmon family loves ballooning and even owns their own hot air balloon (a Montgolfière). You can feel it at work and in their private lives: this family simply wants to reach high.
