A brilliant, golden-yellow wine with fine, shimmering reflections. Swirling reveals smooth "church windows" that emphasize its texture and depth. The color promises complexity and aromatic richness.
An expressive bouquet with notes of ripe white peach, candied citrus zest, and orange blossom. Spicy accents of dried herbs and fennel seeds mingle with hints of almonds and fine yeast. In the background, mineral nuances reminiscent of wet slate and preserved lemons resonate.
The wine presents itself as supple and powerful, yet precise and balanced. The juicy freshness of citrus aromas meets a fine creaminess, which is rounded off by subtle oak influence. A saline minerality accompanies the long, slightly tart finish, which fades with delicate floral and herbaceous notes.
The vines grow on various small plots with meager slate and granite soils. Hand-picked grapes, spontaneous fermentation with natural yeasts, and skillful aging in stainless steel and wood give this wine an authentic and terroir-driven character. A white wine with depth and finesse.
In Mogarraz, foxes and hares still say Buenas Noches to each other. In the biosphere reserve, Agustín's vine bushes grow in the untamed wilderness - hidden between wild rosemary and forest.
In 2012, Agustín and his wife Olga founded the La Zorra winery with an attached restaurant - a real family business. Agustín can especially rely on his friend and cellar master Ramiro. The two of them have the same vision with their joint project: they want to preserve the heritage of their homeland and use new, modern techniques to demonstrate the top quality of the old varieties. And in doing so, amaze the whole world. An ambitious goal. They are particularly fond of the old grape variety Rufete, which has adapted perfectly to the wild Sierra de Salamanca since pre-Roman times. Their focus is on quality and therefore on small quantities. On honest and respectful treatment of wild nature and not on the mass production of cheap wine. The wildness in the wine is also reflected in the eponymous vixen, “La Zorra”, who regularly roams through the wild vineyards.
