A noble golden-yellow sits richly in the glass, with a slight sparkle at the rim; the light refracts clearly, revealing a medium body without any cloudiness. The color is as vivid as the first glance into a sun-drenched vineyard in late summer.
The nose is dominated by notes of white peach, accompanied by delicate almond tones and a hint of eucalyptus, which lends the aroma profile and depth. Behind these, nuances of ripe honeydew melon and a subtle green fruit emerge, together creating an intense yet open aromatic picture.
On the palate, mandarin and lychee join the original aromas. Honey Darling has a present acidity, while the fruit remains in the foreground. It remains smooth on the tongue without being boring.
The vineyard is surrounded by two wild honey meadows - hence the reference to honey. Two constant winds give the Pinot Gris its concentrated fruit and its spirit. It was harvested in the morning hours in cold temperatures. Short maceration, slow fermentation to preserve the fruit aromas.
