Solideo 2021
Solideo
Cabernet Sauvignon
Albillo Mayor
Solideo
Plum smoke with dark chocolate
Dense and almost impenetrable, the wine lies in the glass – a deep, dark ruby with a violet core and an inky rim. Even when swirled, its viscosity is evident: slow, rich "church window" legs unequivocally announce its extract density and ripeness.
Nose: like a walk through an old library with a cigar lounge – toasted oak, cigar box, vanilla bean, and dark chocolate, with plum, blackberry, and black cherry. In the background: liquorice, cinnamon, and damp earth, almost mystical, with a subtle depth.
On the palate, it flexes muscles in a tailored suit: powerful, silky, and with a firm grip. Ripe tannins meet dark fruit, fine dark chocolate, and tobacco smoke. Everything is in place, nothing is obtrusive. Little acidity, much structure – a wine with a lasting impression and posture, not for everyday sipping.
Produced only in exceptional vintages, the Solideo matures in American and French oak – with a delicate touch. The wine comes from vines over 40 years old, growing in calcareous gravel soils along the Duero. Selective harvesting and long barrel aging bring depth, finesse, and timelessness to the glass.
Dehesa de los Canonigos is one of the great historical estates of the Ribera del Duero and one of the best Tempranillo producers – and all without any “brand stickers”.
Ribera del Duero - This region produces Spain's most expensive red wines, and it's teeming with names that command hundreds of euros per bottle – Pingus, Vega Sicilia, Emilio Moro, and many more.
These are the neighbors of Belen and Ivan, who are now running their Dehesa los Canonigos for the 5th generation. The name translates to "Pasture of the Canons" and refers to the canons of the cathedral in Valladolid and their possessions in the region.
The two siblings form a perfect team. Belen's domain is the wine cellar, while Ivan handles the management of the winery and the accompanying agricultural land. With great passion, the two siblings produce wines that can easily compete with their neighbors: they manage to reach the top at a fair price. In 2025, the winery was ranked number 1 among all wineries by the renowned magazine "Verema". Without purchased "brand labels".
