Cabernet Sauvignon
Philipp's Rosé
Tangy wild strawberry with lime and rhubarb.
In the glass, the rosé presents itself in a delicate salmon hue – like morning sun on slate. Crystal clear, with a fine copper shimmer that appears almost metallic against the light. Elegant, yet not pale – this rosé doesn't put on a show visually, but remains stylishly restrained.
On the nose, wild strawberry immediately takes center stage – wild, sweetish, but not cloying. Behind it: rhubarb stalks, fresh lime zest, and a cool minerality reminiscent of wet stone. Subtle herbal notes shimmer through, such as savory and a pinch of white pepper.
Bone-dry on the palate, yet with a wonderfully juicy flow. The acidity grips precisely – almost like a squeeze of lemon on fresh fish. The texture remains light and silky, with grip on the palate and a subtle spice in the finish. Not a crowd-pleaser, but a stylish, assertive wine.
Pressed from an unusually exciting cuvée: Pinot Noir, St. Laurent, Merlot, Cabernet Sauvignon, and Blaufränkisch. Grown on limestone and loess in the North Palatinate, spontaneously fermented and aged in stainless steel – vinified uncompromisingly for freshness, minerality, and structure.
