The Perfect Risotto
Ingredients
For 2 people
- one small onion
- 65g butter
- 200g Arborio or Carnaroli rice
- 450ml chicken broth
- 250ml dry white cooking wine
- 5g salt
- 1 pinch black pepper
- 1 pinch nutmeg
- 1 tbsp finely chopped herbs
- Parmesan cheese, grated

Method
First, peel and finely dice the onion. Melt the butter in a pot and wait for it to lightly foam. Sauté the onion in it for a few seconds, then add the Arborio rice to the pot.
Stir until the rice is translucent and the onion is very lightly browned (Important: do not burn the onion - otherwise it will become bitter). Deglaze with white cooking wine and wait until the liquid is heavily reduced. Now turn the stove to medium heat.
Now season with salt, black pepper, and nutmeg.
Add chicken broth ladle by ladle and stir constantly. As soon as the liquid is used up, add more broth. Stir constantly.
Allow the rice to swell over 20 minutes, continuing to stir. As soon as the rice leaves a semi-liquid, shiny trail ("schlonzig" in kitchen jargon), taste the rice and check for doneness. A slight "bite" may still be present - depending on your preference.
Before serving, stir in a handful of grated Parmesan and fresh herbs.
Serve in a warm bowl and sprinkle with Parmesan and herbs. Ecco - buon appetito!
Variations
This recipe can be understood as a basic recipe and can be extended as desired. Depending on your needs, you can work with toppings or with pre-cooked ingredients.
In the case of porcini mushroom risotto and also pumpkin risotto, it is recommended to cook small pieces directly in the risotto, so the rice can absorb the flavor and texture of mushrooms and pumpkin.
If you want risotto with a coarser texture and more color, here's a tip: sauté the vegetables and add them only at the very last second. When serving, a crisply fried part can be added on top as decoration and an absolute flavor bomb.
