HOW TO MAKE THE PERFECT RISOTTO

The perfect risotto

Ingredients

For 2 people

  • a small onion
  • 65g butter
  • 200g Arborio rice or carnaroli
  • 450ml chicken broth
  • 250ml white cooking wine
  • 5g salt
  • 1 pinch of black pepper
  • 1 pinch of nutmeg
  • 1 tablespoon finely chopped herbs
  • Parmesan cheese, grated

Proceed

First, peel the onion and dice it finely. Melt the butter in a pan and wait for it to foam slightly. Fry the onion in it for a few seconds and then add the Arborio rice to the pan.

Stir until the rice is translucent and the onion is very lightly browned (important: do not burn the onion - otherwise it will become bitter). Deglaze with white cooking wine and wait until the liquid has reduced considerably. Now set the stove to medium.

Now season with salt, black pepper and nutmeg.

Add chicken stock a ladle at a time and stir constantly. As soon as the liquid is used up, add more stock. Stir constantly.

Allow the rice to swell for 20 minutes, stirring constantly. As soon as the rice leaves a semi-liquid, shiny trail behind it (“sloppiness” in kitchen jargon), taste the rice and check for bite. There may still be a bit of bite left – depending on your taste.

Before serving, add a handful of grated Parmesan and fresh herbs.

Serve in a warm bowl and sprinkle with parmesan and herbs. Ecco – buon appetito!

The recipe can be seen as a basic recipe and expanded as desired. Depending on your needs, you can use toppings or cooked ingredients.

In the case of the porcini mushroom risotto and also the pumpkin risotto, it is recommended to cook small pieces in the risotto so that the rice can take on the taste and structure of the mushrooms and pumpkin.

If you want a risotto with a coarser structure and color, here's a little tip: fry the vegetables and only add them at the very last second. When serving, a seared part can be placed on top as a decoration and absolute flavor bomb.
