The Chardonnay has a medium straw yellow color.
The first aroma we notice is that of orange peel, accompanied by pear and quince jelly, pineapple yoghurt, shortcrust pastry and apple peel. Salty notes and the scent of hay bales can also be found in this world-class Chardonnay.
The power of the Chardonnay is evident on the palate, where it remains controlled, elegant and slim. At first it seems a little closed, but after the second sip it opens up with the full range of fruit, with orange and mango present again. The interplay between tannin, acidity and sweetness is perfectly balanced and makes the wine pleasantly round without being boring.
The Chavy family and the location, location, location.
This motto describes very well why Burgundy and its wines are so famous. Even UNESCO has classified the tradition of wine cultivation in connection with the unique geological features as worthy of protection and has created the so-called Climats for the World Heritage List.
At Chavy-Chouet, too, we can feel the long tradition and attention to detail in the wines. Romaric Chavy is already the 7th generation of the domaine and remains true to the approach of creating finesse-rich wines with the utmost care. He is particularly proud of the numerous Premier Cru sites such as Les Charmes or Les Genevrières, which are among the best in the region and make his wines so distinctive.
Finding first-class wines in Burgundy without having to pay the often overpriced prices is a herculean task. We were all the more receptive to the tip from our friend Kai Schubert of Schubert Wines, who drew our attention to Chavy-Chouet. Chardonnays and Pinot Noirs with such depth and character without any airs and graces are something you have to try to believe.
During a flying visit to Burgundy, we met Romaric Chavy and got to know him and his wines. We were more than impressed by what he brought to the bottles of the 2016 vintage despite his young age and his wealth of experience. Pure finesse, radiance and strong minerality. His Chardonnays are precise and make you sit up and take notice. Here we have a must-have for the wine cellar with plenty of aging potential. A masterpiece in close contact with the region's greats.
