    Mature apple with a grapefruit kick.

    In the glass, it stands clear and precise as if sculpted – pale yellow with a slight greenish tinge, reminiscent of freshly squeezed lime juice. Appearing lean, with delicate church windows at the rim of the glass, subtly hinting at its inner density and structure.

    The nose presents a stony coolness, almost salty – like a fresh sea breeze over limestone. Behind that: ripe apple, pear, a hint of honeydew melon. Accompanied by lemon and grapefruit, cut with razor-sharp precision. A touch of smoke, a hint of butter, and a vegetal note like freshly tilled asparagus soil in spring.

    Gripping like a white linen suit: cool, clear, with a mineral drive. The acidity is present but finely etched – it runs through the wine like a common thread. Grapefruit bitterness, crisp pear, a hint of nut, slightly creamy texture. Dry, but never austere. Precise and unadorned.

    The wine grows on weathered limestone soils – stony, barren, poor in nutrients. This is exactly what Pinot Blanc loves: stress with substance. Vinification is traditional, partly in stainless steel, partly in large wooden barrels, which gives the wine structure and a slight creaminess, without robbing it of its freshness.
